Ingredients:
- 1 Green Plantain
- 1/2 teaspoon salt
- 1 cup vegetable oil
Instructions:
- Peel and Cut plantain into thick slices (about 6 for 1 plantain).
- Heat oil in a large skillet over medium heat. Add plantains to the hot oil and cook for 2 minutes per side or until golden brown.
- Remove from heat.
- With a plantain press, flatten the fried up chunks. If you don’t have a plantain press, use the bottom of a coffee cup to press down the chunks.
- Re-heat the oil and drop each flattened plantain carefully. Cook for 2 minutes per side or until golden brown.
- Remove from heat. Drain on paper towels. Sprinkle salt as desired. Serve hot with dipping sauce of your choice.
Tips for frying plantains
When frying plantains, it is important to use a neutral oil such as canola or vegetable oil. Olive oil should not be used as it will impart a strong flavor to the plantains. The plantains should not be too thick. If they are too thick, they will take longer to cook. It is also important to make sure the oil is heated to the proper temperature before adding the plantains.
If the oil is too hot, the plantains will cook too quickly on the outside while remaining raw on the inside. If the oil is not hot enough, the plantains will absorb too much oil and be greasy.
