Ingredients:

  • 1 lb. boiled potatoes 
  • 1 lb. carrots, boiled
  • 1 lb. peas, canned
  • 1 lb beets, boiled 
  • 1 cup mayonnaise 
  • Salt and pepper to taste



Instructions:

  1. Cook and dice the potatoes, carrots, and beets.
  2. In a large bowl, combine the diced vegetables with peas, then season with salt and pepper to taste.
  3. Let the salad rest for at least 30 minutes to allow the flavors to blend together.
  4. Serve chilled or at room temperature.
